Richard has been a chef for over 20 years, the last 6 of them as Head Chef at Define. A (mostly) calm, dedicated character with a great breadth of experience, from classic 3* Rosette kitchens to yachts, to chalets, enhanced by his frequent travels to far-flung lands.

He loves to seek out authentic flavours in their homelands whilst soaking up new cultures, from Peru to Vietnam to Japan and soon Nepal (incorporating a hike to Everest base camp!).

Richard enjoys hiking (not for much longer!) and camping in areas of outstanding natural beauty accompanied by his partner Fifi and his Triumph motorbike (both also of outstanding natural beauty!).

Greatest Achievement:

Blagging a 4-month stint as a Chef on an island resort on the Great Barrier Reef!

Secret:

Whilst I’m an enthusiastic drinker of fine beers, my home-brewing efforts have so far yielded undrinkable demijohns of undrinkable filth.

Superpower:

A God-given ability to build, de-construct and re-build, flat-pack furniture without instructions.
