An award-winning selection of over 1200 wines and sprits, supported by an ever-changing selection of 32 wines are available by the glass or just to sample on our Enomatic tasting machines. DeFINE Food and Wine offers a thirst-quenching range to take home or dine in.

Taste

Taste

Our Enomatic tasting dispensers offer customers the chance to taste up to 32 wines. Tasters can choose either a 25ml, 125ml or 175ml serving of each wine, by inserting a Define card which they can top up with credit as required. Notes can be provided for guidance, with staff on hand and eager to offer advice if required. A great way to broaden your wine repertoire, with the selection changing monthly. A few trips a month and you could get to taste 384 wines by the end of a year!

We frequently change the line-up of wines featured on our tasting machines- we've show-cased over 300 different wines in the past 12 months! If you don’t fancy talking to us, then we provide notes to help guide you through our current selection.

Corkage

Customers can also choose any of the +1000 wines from the shop to enjoy on the premises, with a small corkage fee of £7.50 per bottle applied to the shelf price of the wine. This goes some way to cover the costs we incur in providing the setting, seating, glassware (let alone the high quality staff!), representing great value compared to standard restaurant mark-ups. Free corkage on any wines that retail for £30 or more.

Events

Define’s themed events have already attracted a loyal band of followers, with tickets frequently selling out soon after their release. We’ve been fortunate to attract a number of high-profile, A-lister winemakers in recent years, and we now have the talent and facilities to prepare dishes to compliment a line-up of wines.

VAJRA BAROLO & TRUFFLE FEAST

Very excited about this. DeTeam are heading out to Alba to visit a couple of Barolo producers, have a meeting about Christmas, go truffle hunting and return with (white) gold in great store. We’ll visit Francesca Vajra at her family domain, a high quality Barolo producer, who will return with us to present the Vajra range at a very special dinner at Define, using the white alba truffles that our faithful hounds will have led us to. White alba truffle, or tuber magnatum, is one of the most highly prized foodstuffs on the planet, and can reach upwards of £2500/kg. We’ll use our finest negotiating skills to get what we can, and will use the threat of no-deal to drive the hardest bargain. But fret not, you will get to taste white truffle, fresh out of the ground, smuggled into England beyond any backstop that stands in the way. Here’s the menu:

FERGHETTINA & AZIENDA AGRIGOLA PRA DINNER

Not one A-list winery, but a double-header for you. This is like two heavyweight rock-stars joining forces, like when Paul Young and Zucchero combined with their ’timeless’ hit, Zens Una Donna. But alas, we will not be without a woman, we shall be blessed by the presence of 'due donne', Laura & Valentina.

First up, allow me to introduce Laura Ferghettina who will be joining us from her family winery in Lombardy, sharing her exceptional range of Franciacorta (pronounced franch-ea-ah-cort-ah), the source of Italy’s finest Champagne-method sparkling wines. What Italians drink when they’re celebrating in style. Also with us for the evening is Valentina Adami, representing the wines of Giacomo Pra, one of Verona’s finest wineries, that we’ve dealt with for nearly 20 years. I’ve long been a fan of their Soaves, but their red wines from Valpolicella have evolved into sensual beauties, culminating in their awesome Amarone. How about this:

SUNDAY JAZZ

Our Sunday Jazz continues to draw crowds- the last one was my favourite so far, but the September instalment is of particular note: Andy Scott, the renowned Saxophonist and composer, who curates the monthly line-up for us, will be gracing us with his presence performing alongside another UK jazz legend, Paul Mitchell-Davidson on guitar, with Stan Scott on Bass. A touch of Brazil comes to DeFine, with beautifully melodic bossa nova, plus a few originals composed by Paul. As ever, a fine platter and a 500ml carafe to share between two, whilst taking all this in, costs £25pp. SUNDAY 29th SEPTEMBER, 3pm-6pm.

School

We are delighted to confirm the dates for our forthcoming WSET Level 2 Course at De:WINE School. The course is tutored by our good friend Miles Corish, one of the few Masters of Wine on the planet. Indeed, more people have left this planet and ventured into space, than have made it through the gruelling qualification to become a Master of Wine. Not only does Miles know his stuff, he is a great communicator, and were it not for one delinquent trade ‘student’ enrolled on an earlier course, De:Wine School would boast a 100% pass rate.

Not only will you end up with an official trade qualification, more importantly, I guarantee that this course will reshape your take on wine, increase your appreciation of it exponentially and empower you to shoot down wine snobs with great glee!

The course will take place over the following 9 sessions, all on a Monday evening at Define from 7pm-9pm.

Each session will include 8 wines to be tasted, as you would expect, using significantly greater quality examples than most WSET courses offered. The sessions will be videoed so you can catch up with any session you’re unable to make.

We intend to lead on to WSET Level 3 after this course, for those that just can’t get enough.

The cost for the course is £395. A bit more than some, a bit less than others, but in one of the nicest classrooms, taught by a Master of Wine, tasting Define’s wines.

About Us

Define was founded in 2000 by Jon Campbell, a then spritely soul, battle hardened by a stretch with a respected Champagne house. Having worked in and supped his way through France, Jon set out to offer a stage for the types of wine that inspired him into the trade in the first place. Years of travel and hard tasting have resulted in an enviable collection of over 1000 labels, showcasing the breadth and glory of artisan wine made with passion and purpose. The business has evolved over the years, becoming a magnet for enlightened drinkers in the North West. Visitors embrace the range, the expert advice on hand, and the chance to taste 32 cracking bottles whenever they like from Define’s sampling machines. An unerring dedication to quality and the creative approach of the team was recognised at the highly regarded International Wine Challenge, with Define winning the coveted Regional Merchant of the Year award.

The trade division of Define supplies a number of leading pubs and restaurants in the North West as well as a long list of the most celebrated Michelin restaurants and eminent foodhalls in London with a number of wines, spearheaded by the rare, cult Champagne from Jacques Selosse, represented exclusively in the UK by Define. We also run the DeFine Wine School from the Sandiway premises, with Level 1 and Level 2 WSET accredited certificates presented by Master of Wine Miles Corish. With a 100% pass rate to date, it’s a wonderful way to develop your appreciation of wine and is open to both members of the public and to our trade customers.

Define’s Deli offers a wide selection of British farmhouse cheese, charcuterie and pâtés, as well as a mouth-watering selection of rare treats sourced mainly from Spain and Italy, much of which is used to inspire a range of dishes prepared by the Define chefs. Last October saw the launch of a wonderful new dining area at the Sandiway premises, with an atrium room housing yet more wine and a stylish dining area. Customers can now enjoy this wonderful space at various times of the day, with award-winning coffee, breakfast items and fine French pastries served from 9am, delicious lunch options through the week, and a mouth-watering array of meditteranean tapas and small plates served on Thursday, Friday and Saturday evenings. With 32 wines available to try by the glass, and a further 1000 available by the bottle, it’s a great way to explore the world of wine alongside fine produce in a refined, relaxed environment.

We also frequently host wine-themed dinners with visiting winemakers, matching dishes to a range of wines. The Grand Tasting

We’re delighted to confirm the details for our annual showcase event, to be held at the Sandiway store on Sunday 11th November. A chance to work your way through over 100 of our greatest wines, with a host of reckless offers and limited release parcels to tempt you. As ever, we’ll have a number of experts alongside DeTeam to talk you through the range, as well as a host of delectables from the deli to tuck into. The perfect way to prepare for the festive season ahead.

The tasting will run from 12pm-6pm. To avoid potential riots, we’ve decided to split the tasting into two sittings, so you can choose to come from 12pm-3pm, or from 3pm-6pm. Like the swimming baths- please don’t be offended when we kick you out of the pool!

Tickets cost £25 each. If you place an order on the day for over £250, we’ll refund the cost of your ticket.

THE GRAND TASTING DINNER

Our Head Chef Richard has come up with a fine menu to finish the evening off in style which I’ve matched with a few of my favourite wines. Tickets for the dinner will be capped at 60, and we’ll reserve a corresponding number of tickets for the 3pm-6pm tasting session. As last year, we’ll need a good hour after the tasting finishes at 6pm to prepare the tables for dinner. We’ll serve the Taittinger Champagne at 6.30pm alongside the canapés from 6.30pm, and sit down at 7pm. As ever, it should be fun.
