An award-winning selection of over 1200 wines and sprits, supported by an ever-changing selection of 32 wines are available by the glass or just to sample on our Enomatic tasting machines. DeFINE Food and Wine offers a thirst-quenching range to take home or dine in.

Taste

Taste

Our Enomatic tasting dispensers offer customers the chance to taste up to 32 wines. Tasters can choose either a 25ml, 125ml or 175ml serving of each wine, by inserting a Define card which they can top up with credit as required. Notes can be provided for guidance, with staff on hand and eager to offer advice if required. A great way to broaden your wine repertoire, with the selection changing monthly. A few trips a month and you could get to taste 384 wines by the end of a year!

In addition to our Enomatic machines, we also offer a range of fine and rare wines by the glass using our state-of-the-art Coravin gadget. A great way to try some of the most fabled bottles on the planet at very keen prices.

Customers can also choose any of the +1000 wines from the shop to enjoy on the premises, with a small corkage fee of £7.50 per bottle applied to the shelf price of the wine. This goes some way to cover the costs we incur in providing the setting, seating, glassware (let alone the high quality staff!), representing great value compared to standard restaurant mark-ups.

Events

Define’s themed events have already attracted a loyal band of followers, with tickets frequently selling out soon after their release. We’ve been fortunate to attract a number of high-profile, A-lister winemakers in recent years, and we now have the talent and facilities to prepare dishes to compliment a line-up of wines. PORTUGUESE MASTERCLASS WITH RAYMOND REYNOLDS
Starts 7pm, Tickets £30

We continue our masterclass series with a session hosted by Raymond Reynolds. If I were to approach one person to deliver a masterclass on Portugal, it would be Raymond, which I did, and he said yes. Having lived in Portugal and served as an agent for some of the greatest Portuguese wineries for over 20 years, he knows all there is to know, but delivers his wisdom with great wit and charm. This will be a fun, informative evening, signposted by 8 wines selected by Raymond to express the true wonder of the wines of Portugal. We’ll serve a suitably themed platter at half time too. All in all, a great way to spend a Wednesday evening, and a nice way to extend the holiday mood as you all return from your Algarve villas.

JOHN DUVAL WINE DINNER WITH TIM DUVAL

John Duval was the head winemaker at Penfolds, one of Australia’s most respected wineries, for many years and was the creative force behind a number of legendary releases of their top wine, Penfolds Grange. John left this lofty position to set up his own label and make the wines that he enjoyed to drink. Wines with a more classical leaning, more savoury and refined whilst still delivering a decent fruit-rush. We held a wine dinner with John a good 10 years or so ago, so it is a real pleasure to welcome the next generation, his son Tim, who is taking over as John drifts into retirement (euch, sorry- what a horrible phrase!). Head Chef Richard has come up with a great menu, with four courses devised to match with the wines. You’ll be greeted by a glass of Ozzie fizz from 7pm, and we’ll sit down to the following feast at 7.30pm:

CHATEAU PESQUE WITH FRED CHAUDIERE

Arch-wine critic Robert Parker describes Pesquié as “one of my all-time favourite producers in France”. Fred Chaudiere is now at the helm, the third generation to run this quality-driven estate, and is heading over from France just to be with us. We feel very privileged that Fred is making this effort, and I’m sure you lovely lot will support this suitably. Chateau Pesquié boasts one of the finest terrors in the Southern Rhone, with a cool micro-climate provided by Mont Ventoux, and fine, mineral-divers, limestone-rich soils. Their wines consistently deliver the bright fruit you’d expect from Southern France, coupled with rare freshness and finesse (can you couple three things?). Not only are Fred’s wines drop-dead delicious, the Pesquié story is inspiring, and he is a very charming, elegant Frenchman who speaks impeccable English. Again, Head Chef Richard has come up with a great menu to partner our favourite Pesquié bottlings.

Taittinger’s ambassador Kevin McKee will be with us to talk us through the range of Taittinger Champagnes, including the spectacular Comtes de Champagne. Will match each cuvée to a number of seafood delights, including smoked salmon, crab, caviar, wild prawns and oysters. School

DeWINE School was launched in early 2017, delivering a range of Wine & Spirit Education Trust (WSET) certificates. The course is delivered with style and great wisdom by Miles Corish, one of only 369 Masters of Wine on the planet. Quality wines from the DeFINE range are used to explore grape varieties and regions, and the classroom’s not too shabby either, with the main atrium dining area quickly converted to seat our students. Thanks to the quality of Miles’ teaching, we have a 100% pass rate, with a number of students achieving 100% scores.

About Us

Define was founded in 2000 by Jon Campbell, a then spritely soul, battle hardened by a stretch with a respected Champagne house. Having worked in and supped his way through France, Jon set out to offer a stage for the types of wine that inspired him into the trade in the first place. Years of travel and hard tasting have resulted in an enviable collection of over 1000 labels, showcasing the breadth and glory of artisan wine made with passion and purpose. The business has evolved over the years, becoming a magnet for enlightened drinkers in the North West. Visitors embrace the range, the expert advice on hand, and the chance to taste 32 cracking bottles whenever they like from Define’s sampling machines. An unerring dedication to quality and the creative approach of the team was recognised at the highly regarded International Wine Challenge, with Define winning the coveted Regional Merchant of the Year award.

The trade division of Define supplies a number of leading pubs and restaurants in the North West as well as a long list of the most celebrated Michelin restaurants and eminent foodhalls in London with a number of wines, spearheaded by the rare, cult Champagne from Jacques Selosse, represented exclusively in the UK by Define. We also run the DeFine Wine School from the Sandiway premises, with Level 1 and Level 2 WSET accredited certificates presented by Master of Wine Miles Corish. With a 100% pass rate to date, it’s a wonderful way to develop your appreciation of wine and is open to both members of the public and to our trade customers.

Define’s Deli offers a wide selection of British farmhouse cheese, charcuterie and pâtés, as well as a mouth-watering selection of rare treats sourced mainly from Spain and Italy, much of which is used to inspire a range of dishes prepared by the Define chefs. Last October saw the launch of a wonderful new dining area at the Sandiway premises, with an atrium room housing yet more wine and a stylish dining area. Customers can now enjoy this wonderful space at various times of the day, with award-winning coffee, breakfast items and fine French pastries served from 9am, delicious lunch options through the week, and a mouth-watering array of meditteranean tapas and small plates served on Thursday, Friday and Saturday evenings. With 32 wines available to try by the glass, and a further 1000 available by the bottle, it’s a great way to explore the world of wine alongside fine produce in a refined, relaxed environment.

We also frequently host wine-themed dinners with visiting winemakers, matching dishes to a range of wines.
